Ingredients
4 flour tortillas
2 cups shredded cooked chicken (leftover)
1 ½ cups shredded cheddar cheese
½ cup shredded mozzarella cheese
½ cup diced bell pepper (any color)
¼ cup diced red onion
1 teaspoon ground cumin
½ teaspoon paprika
¼ teaspoon garlic powder
1 tablespoon olive oil
Sour cream, salsa, and cilantro for serving (optional)
Instructions
Preheat skillet over medium-high heat and add ½ tablespoon olive oil.
Place tortilla in skillet, sprinkle ¼ cup cheddar, ¼ cup mozzarella, ½ cup chicken, 2 tbsp bell pepper, and 1 tbsp red onion on half of tortilla.
Sprinkle with ¼ tsp cumin, ⅛ tsp paprika, and 1½ tsp garlic powder.
Fold tortilla in half, cook 2-3 minutes per side until golden brown and crisp.
Repeat with remaining ingredients and oil. Serve warm with desired toppings.
Notes
Use pre-cooked rotisserie chicken for maximum speed
Substitute tortillas with large lettuce wraps for low-carb
Freeze uncooked filled tortillas between parchment paper for later use
Add diced avocado, black beans, or diced tomatoes for extra flavor
