12 oz cheese tortellini (fresh or frozen)
2 tbsp olive oil
3 garlic cloves, minced
1 (28 oz) can crushed tomatoes
1 cup heavy cream
1/4 cup fresh basil, chopped
1/2 tsp salt
1/4 tsp black pepper
2 tbsp butter
1 tsp sugar
Optional: 1/4 red onion, diced

Instructions

Bring a large pot of salted water to a boil. Cook tortellini according to package instructions until al dente (approx 4-5 minutes), then drain.
Heat olive oil in a large skillet over medium heat. Sauté garlic and red onion (if using) for 1-2 minutes until fragrant.
Stir in crushed tomatoes, salt, black pepper, and sugar. Simmer 5-7 minutes until slightly thickened.
Reduce heat. Whisk in heavy cream and butter until sauce becomes velvety. Season with additional salt/pepper if desired.
Toss in drained tortellini and basil, coating well. Serve immediately.
