Ingredients
- 1 package (2.5 teaspoons) unflavored gelatin powder
- 1 cup (227 grams) plain non-fat Greek yogurt
- 1 teaspoon to 1 tablespoon flavoring of choice, such as vanilla extract, almond extract, cocoa powder, coffee extract, or sugar-free syrup
Instructions
- Pour 1/4 cup cold water into a small bowl and sprinkle the unflavored gelatin evenly over the surface without stirring.
- Allow the gelatin to bloom for 5 minutes until it absorbs the water and softens completely.
- Heat the bloomed gelatin over a pot of gently simmering water or microwave it on 50% power in 10-second intervals, stirring between intervals until completely dissolved and transparent.
- Remove the dissolved gelatin from the heat and allow it to cool to room temperature for 2 to 3 minutes.
- Scoop the plain Greek yogurt into a medium mixing bowl and add your chosen flavoring.
- Whisk the yogurt and flavoring together for approximately 30 seconds until evenly combined.
- Slowly pour the cooled dissolved gelatin into the yogurt mixture while whisking constantly.
- Continue whisking for 1 to 2 minutes until the mixture is smooth and homogeneous.
- Divide the mixture evenly among four serving glasses or small bowls.
- Cover the containers loosely with plastic wrap.
- Refrigerate for a minimum of 4 hours, or overnight for a firmer texture.
- Remove from the refrigerator 5 minutes before serving and enjoy chilled.
Notes
Allow the dissolved gelatin to cool to room temperature before adding it to the Greek yogurt to prevent a grainy texture. Bloom the gelatin fully before heating, and chill for at least 4 hours for the best consistency.
