Ingredients
4 chicken breasts (5 oz each)
1 cup panko breadcrumbs
1/4 cup all-purpose flour
2 tbsp olive oil (for coating)
4 large tortillas (whole-wheat or flour)
4 cups romaine lettuce (shredded)
1 cup caesar dressing (store-bought or homemade)
1/2 cup grated parmesan cheese
1 tsp black pepper
1/2 tsp salt
1 tsp garlic powder
Instructions
Pound chicken breasts to 1/2″ thickness
Mix flour and panko breadcrumbs in a bowl
Coat chicken in flour mix, press to adhere
Heat 1 tbsp olive oil in air fryer basket
Cook chicken at 375°F (190°C) for 6 minutes per side (12 total) until golden
Wrap each cooked breast in a warmed tortilla
Toss romaine with caesar dressing
Place lettuce in tortillas, top with parmesan, pepper, and remaining dressing
Fold and serve
Notes
Freeze prepped chicken for up to 1 month
Use gluten-free tortillas for GF version
Add croutons or avocado for extra crunch
Store leftovers in airtight containers for 3 days
