Ingredients
4 boneless skinless chicken thighs
2 tablespoons soy sauce (low-sodium preferred)
1 tablespoon rice vinegar
1 tablespoon grated fresh ginger
2 cloves minced garlic
1 tablespoon brown sugar
1 teaspoon sesame oil
1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
1 teaspoon sesame seeds (optional)
1 scallion, sliced (for garnish)
1 teaspoon cooking oil (for brushing)
Instructions
Pat chicken dry and season lightly with salt
In a bowl, mix soy sauce, rice vinegar, ginger, garlic, brown sugar, and sesame oil
Add chicken; toss to coat. Let marinate 10 minutes
Transfer to air fryer basket in single layer
Air fry at 400°F (200°C) for 10 minutes
Brush with half the marinade
Flip thighs, brush with remaining marinade
Air fry 8 more minutes until golden
In final 2 minutes, mix cornstarch and water to create slurry
Brush onto chicken for glossy glaze
Garnish with sesame seeds and scallions
Let rest 5 minutes before serving
Notes
Marinate no more than 30 minutes to avoid tenderizing meat
