- 2 packets unflavored gelatin powder
- 1 cup cold water
- 1 package sugar-free gelatin powder, any flavor
- 1.5 cups plain non-fat Greek yogurt
- 2 tablespoons allulose sweetener
- 1 teaspoon pure vanilla extract
- 1/8 teaspoon salt
Instructions
- Pour cold water into a small saucepan.
- Sprinkle unflavored gelatin over the surface without stirring.
- Let the gelatin bloom for exactly 2 minutes.
- Heat the bloomed gelatin over low heat, stirring constantly until dissolved and clear.
- Remove from heat.
- Stir in sugar-free gelatin powder, allulose sweetener, vanilla extract, and salt until smooth.
- Pour the gelatin mixture into a blender or food processor.
- Let the mixture cool to room temperature for 5 minutes.
- Add Greek yogurt to the cooled gelatin mixture.
- Blend on low speed for 30 seconds until completely smooth.
- Divide the mixture evenly among 6 serving glasses.
- Cover each glass with plastic wrap.
- Refrigerate for at least 3 hours or overnight for the firmest texture.
- Check that the gelatin jiggles slightly but holds its shape.
- Serve cold directly from the refrigerator.
Notes
