- 2 cups raw honey
- 3 cinnamon sticks
- 1-inch piece fresh ginger
- 4 to 5 whole cloves
- 1/2 teaspoon vanilla extract
Instructions
- Measure two cups of raw honey into a medium saucepan.
- Peel the fresh ginger using a vegetable peeler or small spoon.
- Slice the peeled ginger into thin coins about 1/4-inch thick.
- Gather cinnamon sticks, whole cloves, vanilla extract, and a wooden spoon.
- Place the saucepan over medium-low heat.
- Warm the honey gently without bringing it to a boil.
- Add the cinnamon sticks to the warming honey.
- Stir gently to distribute the cinnamon evenly.
- Add the ginger slices and continue stirring slowly.
- Drop the whole cloves into the mixture.
- Maintain medium-low heat for exactly three minutes.
- Remove the saucepan from heat.
- Add vanilla extract and stir thoroughly until combined.
- Allow the honey to cool at room temperature for about ten minutes.
- Strain the infused honey through a fine-mesh strainer into clean glass jars.
- Remove all solid spices, or reserve cinnamon sticks for presentation if desired.
- Cap jars loosely until the honey reaches room temperature.
- Seal tightly and store in a cool, dark cabinet.
Notes
Never allow the honey to heat above 120°F, as excessive heat can damage the honey’s beneficial enzymes and affect texture. Use fresh spices for the best flavor, and store the finished honey in glass jars away from direct sunlight.
