Instructions

  1. Measure two cups of raw honey into a medium saucepan.
  2. Peel the fresh ginger using a vegetable peeler or small spoon.
  3. Slice the peeled ginger into thin coins about 1/4-inch thick.
  4. Gather cinnamon sticks, whole cloves, vanilla extract, and a wooden spoon.
  5. Place the saucepan over medium-low heat.
  6. Warm the honey gently without bringing it to a boil.
  7. Add the cinnamon sticks to the warming honey.
  8. Stir gently to distribute the cinnamon evenly.
  9. Add the ginger slices and continue stirring slowly.
  10. Drop the whole cloves into the mixture.
  11. Maintain medium-low heat for exactly three minutes.
  12. Remove the saucepan from heat.
  13. Add vanilla extract and stir thoroughly until combined.
  14. Allow the honey to cool at room temperature for about ten minutes.
  15. Strain the infused honey through a fine-mesh strainer into clean glass jars.
  16. Remove all solid spices, or reserve cinnamon sticks for presentation if desired.
  17. Cap jars loosely until the honey reaches room temperature.
  18. Seal tightly and store in a cool, dark cabinet.
