Ingredients
4 boneless chicken breast halves (6 oz each)
2 cups chopped fresh tomatoes
4 cloves garlic (minced)
1/4 cup fresh basil (chopped)
2 tbsp olive oil
1 tbsp balsamic vinegar
8 oz mozzarella cheese (shredded)
1/2 cup Parmesan cheese (grated)
1 tsp dried oregano
1 tbsp salt
1 tsp black pepper
Instructions
Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper.
In a bowl, combine tomatoes, garlic, basil, olive oil, balsamic vinegar, 1.5 tsp salt, and 1 tsp black pepper to create the bruschetta topping.
Spread the bruschetta mixture over the chicken breasts. Top with mozzarella and Parmesan, then sprinkle with oregano.
Bake for 30 minutes or until fully cooked. Let rest 5 minutes before serving.
Notes
Use cherry tomatoes for extra sweetness
Add red onion to the bruschetta for deeper flavor
Chicken can be marinated in balsamic vinegar for 30 minutes for extra tenderness
Cover with foil halfway through baking if cheese browns too quickly
