Ingredients
4 pieces (6 oz each) Boneless, skinless chicken breasts
8 oz Burrata cheese
1 cup Basil pesto (homemade or store-bought, no alcohol)
2 tablespoons Olive oil (extra virgin)
3 cloves Garlic, minced
Salt and Pepper, to taste
Pine nuts, for garnish (optional)
4 lemon wedges for serving
Instructions
Preheat oven to 375°F (190°C)
Season chicken breasts with salt and pepper
Heat olive oil in an oven-safe skillet over medium-high heat
Sear chicken 2-3 minutes per side until golden
Top each breast with a ball of burrata and a spoonful of pesto
Place skillet in oven for 10-12 minutes until chicken reaches 165°F and burrata melts
Garnish with pine nuts and fresh basil
Serve immediately with lemon wedges
Notes
Fresh mozzarella can replace burrata if unavailable
Add minced garlic to pesto before spreading for extra flavor
Chicken can be marinated in pesto for 30 minutes for deeper flavor
Store leftovers in an airtight container for up to 2 days
