Ingredients
4 bone-in, skin-on chicken thighs
8 oz fresh mozzarella cheese, cubed
1 pint cherry tomatoes, halved
1/4 cup fresh basil leaves
2 tbsp olive oil
3 garlic cloves, minced
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp Italian seasoning
1 tbsp balsamic glaze
1/4 cup pitted Kalamata olives (optional)
Instructions
Preheat oven to 425°F (220°C)
Pat chicken thighs dry and season with salt, pepper, and Italian seasoning
Place in a baking dish skin-side up with 1 tbsp olive oil drizzled over
Roast 20 minutes until golden and crispy
Remove from oven and top each thigh with mozzarella, tomatoes, basil, garlic, olives (if using), and remaining olive oil
Return to oven and roast 5 minutes
Drizzle with balsamic glaze before serving
Notes
For easier cleanup and crisper skin, use a wire rack in the baking dish
Caprese topping can be prepped in advance for quick assembly
Balsamic glaze enhances flavor but is optional; substitute with balsamic vinegar if needed
Serve with marinara or crusty bread for a complete meal
