Ingredients
Scale
- 3 large yellow onions, sliced thin
- 1 lb chicken breast, cut into uniform 1-inch cubes
- 12 oz pasta (fettuccine or pappardelle)
- 4 cloves garlic, minced finely
- 1 cup low-sodium vegetable broth
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese, freshly grated
- 3 tbsp extra virgin olive oil
Instructions
- Heat olive oil in a large skillet over medium-low heat.
- Add sliced onions, spreading them into an even layer, and cook slowly for 30 minutes, stirring occasionally until deep golden brown.
- Boil a large pot of salted water and cook pasta according to package directions for al dente texture.
- Sear chicken in a separate pan until golden and cooked through.
- Combine cooked chicken with the caramelized onions once they reach desired jammy consistency.
- Deglaze the pan with a splash of vegetable broth to capture all the flavorful brown bits.
- Stir in heavy cream and parmesan cheese until the sauce thickens and coats the pasta.
- Toss cooked pasta into the sauce, mixing thoroughly so every strand is covered.
Notes
Use a heavy-bottomed skillet to distribute heat evenly and prevent onions from scorching. Add a pinch of salt to onions early to draw out moisture. Ensure pasta water is heavily salted. Do not rush browning the chicken. Finish with fresh herbs like parsley or chives.
