Ingredients

4 boneless, skinless chicken breasts (6 oz each)
6 cups romaine lettuce
2 large tomatoes
1 small red onion
2 medium cucumbers
8 oz crumbled feta cheese
1 cup mayonnaise
1/2 cup plain Greek yogurt
1 tbsp Dijon mustard
2 tbsp apple cider vinegar
1 clove garlic, minced
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper

Instructions

Preheat grill or grill pan over medium heat.
Season chicken breasts with salt, pepper, and 1/2 tsp oregano.
Grill chicken for 6-7 minutes per side until fully cooked.
Chop tomatoes, slice red onion thinly, and dice cucumbers.
In a bowl, mix mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, garlic, and remaining oregano.
Place lettuce on serving plates, top with grilled chicken, veggies, and feta.
Drizzle dressing over the salad just before serving.

Notes

Use halal-certified chicken and dairy if preferred.
