Ingredients
2 boneless chicken breasts (thighs optional)
4 slices white or sourdough bread
1 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs
1 1/2 cups marinara sauce
4 slices fresh mozzarella
2 tablespoons butter (or halal alternative)
Salt and pepper
Grated Parmesan (optional)
Olive oil spray
Instructions
Preheat cast iron skillet or griddle over medium heat.
Season chicken with salt, pepper, and garlic powder.
Dredge chicken in flour, coat with egg wash, then press into breadcrumbs.
Heat 1 tablespoon butter in skillet, cook chicken 3-4 minutes on each side until golden.
Top each chicken piece with mozzarella, then marinara sauce to taste.
Place bread slices on each sandwich, brush with remaining butter.
Cook 3-5 minutes until cheese melts and bread is golden-brown.
Flip carefully to brown the other side.
Notes
Let chicken rest 5 minutes before serving to retain juices
Substitute halal chicken thighs for moistness
Add basil leaves or oregano for authentic flavor
