Ingredients
Boneless skinless chicken breasts (1.5 lbs)
Fresh mozzarella cheese (8 oz), cut into slices
Ripe cherry tomatoes (1 pint), halved
Basil pesto (1/2 cup), store-bought or homemade
Ciabatta rolls (4)
Olive oil (2 tbsp)
Garlic (2 cloves), minced
Salt for seasoning
Black pepper to taste
Balsamic glaze (optional for garnish)
Instructions
Preheat grill or skillet to medium-high
Combine mozzarella and tomatoes in bowl
Season chicken with garlic, salt, pepper, and olive oil
Cook chicken 5-6 minutes per side until golden
Assemble: spread pesto on ciabatta, add chicken, mozzarella/tomatoes, twist ends to seal
Brush tops with balsamic glaze if desired
Let rest 5 minutes before serving
Notes
Mozzarella gives best melt at room temp
Cherry tomatoes concentrate flavor better than sliced
For vegetarian version, substitute chicken with pan-seared falafel
Balsamic glaze adds depth but is optional
