Ingredients
1.5 lbs boneless chicken breast, cut into 1-inch cubes
3 tbsp olive oil
3 cloves garlic, minced
Juice of 2 large lemons
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Instructions
Preheat grill to medium-high heat (around 400°F)
In a bowl, whisk together olive oil, garlic, lemon juice, oregano, salt, and pepper
Submerge chicken cubes in marinade and refrigerate for at least 20 minutes
Thread chicken onto skewers evenly
Grill skewers for 10-12 minutes, turning occasionally, until chicken is fully cooked and slightly charred
Let rest for 5 minutes before serving
Notes
For best results, marinate chicken for at least 2 hours
Use metal skewers or soak wooden ones in water for 20+ minutes to prevent burning
Adjust oregano for stronger flavor
Serve with tzatziki sauce and pita bread
