Ingredients
3 cups mascarpone cheese
6 large egg yolks
1 cup granulated sugar
2 cups cold strong brewed coffee
2 cups heavy cream
16 oz ladyfingers (about 24 pieces)
1 tablespoon vanilla extract
1/4 cup cocoa powder
Pinch of salt
Instructions
Whip mascarpone in a large bowl until smooth
Add egg yolks, sugar, and vanilla extract; mix until fully combined
In a separate bowl, whip heavy cream until stiff peaks form
Fold whipped cream into mascarpone mixture until smooth
Dip ladyfingers briefly into cold coffee (2-3 seconds per side)
Arrange half the ladyfingers in a parchment-lined 9×9-inch dish
Spread half the mascarpone mixture evenly over ladyfingers
Repeat with remaining ladyfingers and cream
Cover and refrigerate for at least 6 hours
Dust with cocoa powder and pinch of salt before serving
Notes
Use freshly brewed coffee at room temperature
Chill in airtight container for up to 24 hours
Soak ladyfingers just enough to keep them tender
Let sit at room temperature 15 minutes before serving for optimal texture
