Ingredients
8 oz whole grain or Italian pasta (e.g., farfalle)
1 ½ cups cooked turkey breast, diced
½ cup dried cranberries
¼ cup sliced almonds, toasted
1 celery stalk, diced
¼ cup red onion, finely chopped
½ cup plain Greek yogurt
¼ cup mayonnaise (vegan optional)
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tsp honey or maple syrup
½ tsp Dijon mustard
Salt and pepper to taste
Fresh parsley or dill, for garnish
Instructions
Cook pasta according to package instructions, drain, and chill.
In a large bowl, combine cooked pasta, turkey, cranberries, almonds, celery, and red onion.
In a separate bowl, whisk yogurt, mayonnaise, Dijon mustard, apple cider vinegar, honey, salt, and pepper until smooth.
Pour dressing over pasta mixture, toss to coat evenly.
Cover and refrigerate for at least 1 hour before serving. Garnish with fresh herbs.
