1 small onion, diced
1 red bell pepper, chopped

Instructions
Season chicken thighs with Cajun seasoning and paprika
Heat olive oil in a large skillet
Sear chicken skin-side down for 5-6 minutes until golden
Add onion, bell pepper, and garlic; cook 3 minutes
Pour in heavy cream, salt, and pepper
Simmer gently for 10-12 minutes until sauce thickens and chicken is tender
Stir in parsley and adjust seasoning
Alternatively serve with rice or bread
