Ingredients
4 boneless, skin-on chicken thighs
1 cup mixed mushrooms (shiitake, cremini)
2 cups fresh spinach
3 cloves garlic, minced
1/2 cup heavy cream
1/4 cup grated Parmesan
2 tbsp olive oil
1 tbsp unsalted butter
1 tsp salt
1/2 tsp black pepper
1 tbsp all-purpose flour (optional for thickening)
1/2 tsp thyme leaves
Instructions
Preheat oven to 400°F (200°C). Sear chicken thighs in olive oil until golden, 4-5 minutes per side
Add butter, mushrooms, and garlic to the pan. Sauté 5 minutes until golden
Stir in spinach and cook until wilted
Pour in cream and stir. Sprinkle Parmesan, season with salt/pepper, and simmer 5 minutes
(Optionally add flour to thicken sauce)
Transfer to oven, bake 10 minutes until chicken reaches 165°F
Garnish with thyme before serving
Notes
Use chicken thighs with skin for juiciness
Remove mushrooms first if chicken cooks faster
Swap heavy cream with milk + cornstarch slurry for lighter version
Store leftovers in airtight container up to 3 days
