  • Total Time: 30
  • Yield: 8 servings 1x

Ingredients

Scale

2 cups elbow macaroni (cooked and drained)
1/2 cup mayonnaise
1/2 cup thousand island dressing
1/2 cup sweet pickle relish
1 cup diced bell peppers
1 cup chopped celery
1/2 cup diced red onion
3 hard-boiled eggs, chopped
1 teaspoon fresh dill, chopped
1 teaspoon paprika
Salt and pepper to taste

Instructions

Bring a large pot of salted water to a boil. Cook macaroni according to package instructions until al dente (usually 8-10 minutes). Drain and let cool.
In a mixing bowl, combine mayonnaise, thousand island dressing, relish, bell peppers, celery, red onion, and dill. Stir well to combine.
Once macaroni is cooled, add it to the dressing mixture. Gently fold in chopped hard-boiled eggs. Season with salt, pepper, and paprika.
Chill the salad for at least 30 minutes before serving to allow flavors to meld.

Notes

For optimal texture, use chilled ingredients and avoid overdressing.
Add 1/4 cup chopped parsley for extra freshness if desired.
Store in an airtight container in the refrigerator for up to 3 days.
