Ingredients
4 boneless skinless chicken thighs
2 tbsp olive oil
3 garlic cloves, minced
1 cup sun-dried tomatoes, chopped
1/2 cup chicken broth
1/2 tsp Italian seasoning
1 cup fresh spinach
1/2 cup heavy cream
1/4 cup grated parmesan
1/2 tsp salt
1/4 tsp black pepper
Instructions
Heat olive oil in a large skillet over medium-high. Sear chicken until golden (4-5 min per side). Remove chicken and set aside.
Sauté garlic, sun-dried tomatoes, and Italian seasoning in same skillet for 2-3 min.
Deglaze with chicken broth, scraping up browned bits. Stir in cream, parmesan, salt, and pepper. Simmer 3-5 min.
Add spinach and wilt (1-2 min). Return chicken to skillet and spoon sauce to coat. Cook 2-3 min until fully cooked.
Notes
Use heavy cream for richest texture; substitute non-dairy milk for a lighter version
Add steamed pasta or crusty bread for a complete meal
