Ingredients

6 boneless skinless chicken breasts
2 cups dry stuffing mix
1 (10.5 oz) can cream of chicken soup
1/2 cup sour cream
2 cups chicken broth
1/2 cup melted butter
1 celery stalk, chopped
1 small onion, chopped
1 carrot, diced
1 tablespoon fresh parsley, chopped
Salt and pepper to taste

Instructions

Heat butter in a skillet; cook onions, celery, and carrots until tender. In a bowl, mix stuffing mix, soup, sour cream, and 1 cup broth. Layer chicken in the crockpot, top with vegetable mixture, and spread stuffing mixture over. Cook on LOW 4–5 hours or HIGH 2–3 hours. For a golden top, broil 1–2 minutes before serving.

Notes

For a crisper top, broil briefly. Substitute 2 green bell peppers for carrots if preferred. Store leftovers in an airtight container for 3–4 days.
