Ingredients

4 boneless, skinless chicken breasts
1 cup mushrooms, sliced
1/4 cup olive oil
1/2 cup non-alcoholic Marsala wine substitute
1 cup chicken broth
2 tablespoons gluten-free all-purpose flour
2 cloves garlic, minced
1 teaspoon fresh thyme
Salt and pepper to taste

Instructions

Pat chicken dry and season with salt and pepper
Heat olive oil in skillet to brown chicken briefly on both sides (optional)
In crockpot, combine browning oil, mushrooms, garlic, thyme, and chicken
Pour in Marsala substitute and broth
Cover and cook on LOW for 4-5 hours
Ladle remaining sauce into saucepan, mix flour with small amount of liquid to make slurry, thicken sauce
Serve chicken with sauce from crockpot and thicken extra sauce for drizzling
