A rich, hearty one-pot Italian-American classic combining tender slow-cooked chicken, marinara, pasta, and melted cheeses. Minimal effort, maximum flavor in a single crockpot.

Ingredients

2 lbs boneless skinless chicken breast, cut into 1-inch cubes
1 lb penne or rotini pasta
2 cups marinara sauce
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
3 cloves garlic, minced
1 small onion, diced
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1/2 cup all-purpose flour (optional for dredging)

Instructions

Dredge chicken pieces in flour (optional for browning)
In crockpot, heat olive oil. Add onion, garlic, and Italian seasoning; sauté briefly
Add chicken and stir to coat
Pour in marinara sauce, salt, and pepper
Cook on low for 4-6 hours
In final 30 minutes, stir in pasta
Top with Parmesan and mozzarella during last 15 minutes of cooking
Let rest 10 minutes before serving

Notes

Use chicken thighs for juicier results
Add fresh basil or oregano for extra depth
Storage: refrigerate leftovers within 2 hours
