1.5 lbs boneless, skinless chicken thighs
1.5 cups cannellini beans, drained and rinsed
1 medium onion, diced
4 garlic cloves, minced
10 oz fresh spinach
4 cups low-sodium chicken broth
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried oregano
1 tsp salt
1 tsp black pepper
1 tbsp chopped fresh parsley (for garnish)

Instructions

Heat olive oil in a skillet over medium heat. Sear chicken thighs until golden (optional, for added flavor).
Transfer chicken to the crockpot. Add onion, garlic, thyme, oregano, and salt.
Pour in chicken broth and add cannellini beans.
Cover and cook on Low for 6-7 hours or High for 3-4 hours.
In the last 15 minutes of cooking, stir in fresh spinach.
Garnish with fresh parsley before serving.
