Ingredients

2 (6-ounce) boneless skinless chicken breasts
8 oz penne pasta
1 cup heavy cream
2 tbsp Cajun seasoning
1 red bell pepper, diced
3 garlic cloves, minced
1 small onion, chopped
1/2 cup grated Parmesan cheese
2 tbsp olive oil
Salt, to taste
Black pepper, to taste

Instructions

1. Season chicken breasts with salt and pepper.
2. Place in crockpot, cook on low for 2 hours (chicken should be juicy, not fully cooked).
3. Add onion, garlic, and bell pepper; cook on low for 1.5 hours.
4. Stir in heavy cream, Cajun seasoning, and olive oil; simmer on low for 1 hour.
5. Cook pasta in boiling water until al-dente; drain.
6. Gently fold cooked pasta into crockpot mixture. Sprinkle Parmesan and stir to coat.
7. Cook 10-15 minutes more to meld flavors and warm through.

Notes

For dairy-free: substitute heavy cream with coconut milk and Parmesan with nutritional yeast.
Add spinach or mushrooms for extra vegetables.
Let sauce thicken fully before mixing in cooked pasta for best texture.
