Ingredients

1.5 lbs boneless skinless chicken thighs
Zest of 2 medium oranges
1/4 cup soy sauce (or tamari for gluten-free)
3 tbsp honey
2 tbsp rice vinegar
2 tsp grated fresh ginger
1 tbsp minced garlic
1 medium onion, sliced
1 carrot, julienned
1 cup low-sodium chicken broth
1/2 tsp sesame oil
1 tbsp vegetable oil for the crockpot
1 green onion, chopped (for garnish)
1 tbsp sesame seeds (for garnish)

Instructions

Pat chicken dry and season with salt/pepper
Combine orange zest, soy sauce, honey, vinegar, ginger, garlic, onion, and carrot in a bowl
Pour mixture over chicken in the crockpot, add broth and carrots
Place crockpot lid on and cook on low 6-8 hours or high 3-4 hours
Garnish with green onions and sesame seeds before serving
