Ingredients
- 8 packets (28 grams) unflavored gelatin
- 3 cups filtered water
- 2 cups fresh mixed berries, chopped
- 1 cup fresh citrus juice
- 2–4 teaspoons stevia or monk fruit sweetener
- 1/2 cup organic coconut milk
- 1/4 teaspoon sea salt
- 1 teaspoon pure vanilla extract
Instructions
- Measure 3 cups of filtered water and pour it into a medium saucepan.
- Place the saucepan over medium heat and bring the water to a gentle simmer without boiling.
- Sprinkle the unflavored gelatin slowly over the hot water while stirring constantly with a whisk.
- Continue stirring for approximately 2 minutes until the gelatin dissolves completely and the mixture becomes clear.
- Remove the saucepan from the heat and allow the gelatin mixture to cool for 5 minutes.
- Add 1 cup of freshly squeezed citrus juice to the warm gelatin mixture while stirring gently.
- Stir in 2-4 teaspoons of stevia or monk fruit sweetener, adjusting to your preferred sweetness.
- Pour in 1/2 cup of organic coconut milk in a thin stream while whisking continuously.
- Add the vanilla extract and sea salt, stirring until fully combined.
- Chop the fresh mixed berries into uniform bite-sized pieces.
- Pour approximately two-thirds of the gelatin mixture into a 9-by-13-inch glass baking dish.
- Distribute the chopped berries evenly over the gelatin base layer.
- Pour the remaining gelatin mixture over the berries until they are fully covered.
- Refrigerate uncovered for 30 minutes to allow the top layer to set slightly.
- Cover the dish with plastic wrap and refrigerate for an additional 3 1/2 hours until completely set.
- Cut into 6 equal squares and serve chilled.
Notes
Use unflavored gelatin and fresh or frozen unsweetened berries for the best results. Dissolve the gelatin completely in hot liquid before adding cooler ingredients to prevent lumps. Keep the dessert refrigerated and serve chilled; reheating is not recommended.
