  • 1 cup fresh raspberries

  • 12 teaspoons liquid stevia or monk fruit sweetener

Instructions

  1. Pour boiling water into a heatproof glass bowl.
  2. Sprinkle both packets of unflavored gelatin over the water surface.
  3. Let the gelatin sit undisturbed for 2-3 minutes to bloom.
  4. Stir vigorously for 30 seconds until the gelatin dissolves completely with no lumps.
  5. Add unsweetened raspberry juice and liquid stevia or monk fruit sweetener.
  6. Mix thoroughly until fully combined.
  7. Let the gelatin mixture cool to room temperature for about 10 minutes.
  8. Divide fresh raspberries evenly among six glass serving cups or one 6-cup gelatin mold.
  9. Pour the cooled gelatin mixture slowly over the raspberries.
  10. Place the cups or mold on a level refrigerator shelf.
  11. Chill for 3-4 hours until completely set and jiggly.
  12. Test the gelatin with a spoon to make sure it holds its shape.
