- 2 packets unflavored gelatin powder, 14 grams
- 1 cup unsweetened raspberry juice
- 1 cup boiling water
- 1 cup fresh raspberries
- 1/2 cup unsweetened whipped coconut cream
- 1–2 teaspoons liquid stevia or monk fruit sweetener
Instructions
- Pour boiling water into a heatproof glass bowl.
- Sprinkle both packets of unflavored gelatin over the water surface.
- Let the gelatin sit undisturbed for 2-3 minutes to bloom.
- Stir vigorously for 30 seconds until the gelatin dissolves completely with no lumps.
- Add unsweetened raspberry juice and liquid stevia or monk fruit sweetener.
- Mix thoroughly until fully combined.
- Let the gelatin mixture cool to room temperature for about 10 minutes.
- Divide fresh raspberries evenly among six glass serving cups or one 6-cup gelatin mold.
- Pour the cooled gelatin mixture slowly over the raspberries.
- Place the cups or mold on a level refrigerator shelf.
- Chill for 3-4 hours until completely set and jiggly.
- Test the gelatin with a spoon to make sure it holds its shape.
- Remove from the refrigerator 5 minutes before serving.
- Top each serving with unsweetened whipped coconut cream.
- Garnish with extra raspberries or pomegranate arils if desired.
- Serve chilled as a light weight-loss-friendly dessert.
Notes
Use unsweetened juice and a zero-calorie sweetener to keep this dessert light. Cool the gelatin mixture before pouring it over the fruit so the raspberries stay bright and firm.
