Ingredients

4 cups bread flour
2 teaspoons instant yeast
2 teaspoons salt
2 tablespoons brown sugar
1 tablespoon honey
1 1/2 cups warm water
Optional: dried seeds (sesame, poppy), coarse salt, everything spice

Instructions

In a large bowl, combine flour, yeast, salt, brown sugar, and honey. Mix with 1 1/2 cups warm water until a shaggy dough forms.
Knead dough on a floured surface for 10 minutes until smooth and elastic. Let rest 10 minutes.
Divide dough into 8 equal pieces. Roll each into a ball, then flatten slightly. Push a thumb into the center to form a hole and stretch into a ring.
Place shaped bagels on a baking sheet. Cover and let rest 20 minutes.
Boil 4 cups water with 1 tablespoon honey. Boil bagels 30 seconds per side until shiny.
Bake at 425°F (220°C) for 15-18 minutes until golden. Add toppings during the last minute of baking if desired.

Notes

Use warm (not hot) water to activate yeast
For extra chew, let dough rest 15 minutes before shaping
Freeze unboiled dough for future use
Adjust oven temperature for desired crust darkness
