Ingredients
4 large skin-on bone-in chicken thighs
1 cup pineapple juice (fresh or canned)
1/3 cup low-sodium soy sauce (or tamari for gluten-free)
3 tbsp dark brown sugar
2 cloves garlic, minced
1 tsp grated fresh ginger
1 tbsp cornstarch mixed with 1 tbsp water (to thicken)
1 tbsp vegetable oil (for searing)
Optional: 1 tbsp honey for extra sweetness
Optional: 1 tsp lime juice for brightness
Instructions
Pat chicken thighs dry with paper towels
Heat oil in a skillet over medium-high heat
Sear skin-side down for 3-4 minutes until golden. Flip and repeat
Transfer to oven (450°F/230°C) for 15 minutes
Meanwhile, mix pineapple juice, soy sauce, brown sugar, garlic, and ginger in a bowl
After oven time, brush glaze on chicken
Return to oven and broil for 3-4 minutes for caramelized finish
Thicken remaining sauce by simmering and stirring in cornstarch slurry
Notes
Glaze reheats well; add water if sauce thickens too much
Use a meat thermometer to confirm 165°F (74°C) doneness
Leftovers improve overnight in the fridge
Grilling is an excellent alternative to oven baking
Add toasted sesame seeds and fresh cilantro for garnish
