Instructions
Crack the eggs into a bowl and gently whisk until the whites and yolks are fully incorporated.
Stir in the heavy cream, salt, and pepper until smooth.
In a nonstick skillet, melt the butter over medium-low heat until it shimmers.
Pour the egg mixture into the skillet and let it sit undisturbed for 10–15 seconds.
Using a spatula or silicone whisk, gently stir the eggs in slow, circular motions, allowing small curds to form.
Continue to cook and stir gently until the eggs are set but still tender and glossy, about 5–7 minutes.
Remove from heat and fold in the chopped chives.
Serve immediately.
