Instructions
Preheat oven to 375°F (190°C)
Heat olive oil in an oven-safe skillet over medium heat
Add sliced onions and sauté 20-30 minutes until golden caramelized, stirring frequently
Push onions to the edges, then sear chicken thighs in the center for 5-7 minutes per side until browned
Mix thyme, garlic, and beef broth into the skillet
