Ingredients
1 1/2 pounds yellow onions, thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
4 cups beef broth (halal certified)
1 teaspoon sugar
2 cloves garlic, minced
1 teaspoon dried thyme
2 bay leaves
1 1/2 cups Gruyère cheese, grated
4 slices crusty baguette, seasoned with salt and pepper
Coarse salt and black pepper to taste
Instructions
Heat butter and olive oil in a large pot. Cook onions over low heat for 10 minutes.
Add sugar and cook for 30 minutes until onions are deep golden brown, stirring occasionally.
Stir in garlic, thyme, and bay leaves. Pour in beef broth. Simmer for 20 minutes.
Top each bowl with baguette slices and Gruyère cheese. Broil until cheese is bubbly and golden.
Notes
For halal compliance, use certified beef broth
Substitute Parmesan with Gouda for a nuttier flavor
Let soup rest for 10 minutes before topping to improve cheese adhesion
