Ingredients
4–6 bone-in, skin-on chicken thighs
4–5 cloves garlic, minced
1 large lemon, juiced and zested
3 tablespoons unsalted butter
2 tablespoons fresh herbs (parsley, thyme, or oregano), chopped
1 teaspoon salt
Freshly ground black pepper
1 tablespoon olive oil (optional for searing)
Instructions
Preheat oven to 400°F (200°C)
Pat chicken thighs dry and season with salt and pepper
Heat olive oil in a skillet over medium-high heat; sear chicken skin-side down until golden brown (5-7 minutes)
Flip chicken and add garlic, lemon zest, and juice to the skillet
Transfer to oven and bake 15-20 minutes until chicken is cooked through
Remove from oven, reduce heat to medium, add butter and herbs to the skillet; stir until sauce emulsifies
Serve chicken with the sauce drizzled over it
Notes
For less fat, use skinless chicken thighs or remove skin before baking
Substitute olive oil for butter for a lighter version
Add 1/4 cup vegetable broth if the sauce is too thick
Herb tea bags can be used in a pinch—chop or bruise for extra flavor
