Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
3 tablespoons fresh lime juice (about 2 limes)
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon dried oregano
1 clove garlic, minced
1/2 cup chopped fresh cilantro
1 teaspoon salt
1/2 teaspoon black pepper
1 lime (fresh), for garnish
Instructions
Mix lime juice, olive oil, cumin, oregano, garlic, cilantro, salt, and pepper in a bowl
Pat chicken dry, then press marinate into chicken
Set aside 20 minutes at room temperature
Preheat grill to high heat (400-450°F) with a two-zone setup
Grill chicken spaced apart for 5 minutes
Flip and cook 5-7 minutes until internal temperature reaches 165°F
Rest 5-10 minutes before serving
Notes
Marinate up to 2 hours in the fridge
Swap lime juice with lemon juice if needed
Use kitchen twine to tie chicken for even thickness
Add grill marks by basting with extra marinade early in cooking
Freeze cooked chicken (unrested) for meal prep up to 3 months
