24 skewers, wooden or metal
1/4 cup olive oil
1/4 cup fresh lemon juice
2 cloves garlic, minced
1 tsp dried oregano
Salt and pepper to taste
1 red bell pepper, cut into 1.5-inch pieces
1 red onion, cut into 1.5-inch chunks
Instructions
1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper to make the marinade.
2. Add chicken breasts to the marinade; ensure they are fully submerged. Cover and refrigerate for at least 30 minutes (up to overnight).
3. Thread chicken onto skewers, alternating with bell pepper and red onion pieces.
4. Preheat grill to medium-high heat. Lightly oil the grates to prevent sticking.
5. Grill skewers for 5-6 minutes per side, or until chicken reaches 165°F (75°C) with charred edges.
6. Serve skewers with lemon wedges and optional sides like pita bread or Greek salad.
