Ingredients
4 boneless skinless chicken breasts
2 ripe peaches
1 red onion, sliced
1 avocado
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1 teaspoon salt
0.5 teaspoon black pepper
0.25 cup crumbled feta
0.25 cup toasted pecans
Mixed greens (about 4 cups)
Instructions
Preheat grill to medium-high heat and oil grates
Season chicken breasts with salt and pepper
In a bowl, toss red onion with 1 tablespoon olive oil and grill 3-4 minutes per side until charred
Grill chicken 5-7 minutes per side until cooked through
Grill peaches cut-side down 1-2 minutes per side until caramelized and slightly collapsed
Whisk dressing: combine balsamic vinegar, Dijon mustard, honey, remaining olive oil, salt, and pepper
Assemble salads with greens, grilled peaches, chicken, avocado, onion, feta, and pecans
Drizzle with dressing
