A Portuguese-inspired dish with smoky char and bold citrus-garlic flavor. Tender marinated chicken breasts grilled to perfection using a homemade peri peri sauce.

Ingredients

4 boneless skinless chicken breasts (6 oz each)
1 cup olive oil
2 lemons (zest of 1 + juice of 1)
10 garlic cloves (minced)
1 tbsp paprika
1 tsp ground cumin
1 tsp dried oregano
1 tsp onion powder
1 tsp salt
1 tsp black pepper
6 red chilies (finely chopped or stemmed for heat control)

Instructions

Preheat grill to high heat
Combine oil, lemon juice, lemon zest, garlic, paprika, cumin, oregano, onion powder, salt, pepper, and chilies in a blender
Marinate chicken breasts for 30 minutes at room temperature
Place chicken on hot grate; sear for 2 minutes per side
Move to cooler grill section; cook 5-6 minutes total for medium-rare doneness
Rest for 5 minutes on wire rack before serving

Notes

For milder heat, remove chili seeds before blending
Use cast-iron pan for grilling in a gas grill
Marinade freezes well for up to 3 months
Try adding 1 tbsp maple syrup for a slightly sweeter crust
Serve with roasted garlic potatoes or steamed greens for a complete meal
