Ingredients
1 lb boneless chicken thighs
1/4 cup fresh pineapple juice
1 tbsp chopped fresh ginger
3 cloves garlic, minced
2 tbsp soy sauce
1 tbsp honey
1 tsp ground ginger (optional)
1/4 tsp black pepper
Instructions
Combine pineapple juice, fresh ginger, garlic, soy sauce, honey, ground ginger (if using), and black pepper in a bowl
Submerge chicken in marinade and refrigerate for 20 minutes
Preheat grill to medium-high heat
Grill chicken 5-6 minutes per side until golden
Baste frequently with remaining marinade during cooking
Let rest 5 minutes before serving
Notes
For extra tender meat, marinate up to 2 hours
Use a wire rack on baking sheet for oven-grilling
Substitute olive oil for neutral flavor base if needed
