Ingredients

1/4 cup granulated sugar
1/2 cup unsalted butter, cold
3/4 cup whole milk, warmed to 110°F
1 large egg
1 tsp active dry yeast
1/4 tsp salt
1/2 cup unsalted butter, softened
2/3 cup packed brown sugar
1 tbsp ground cinnamon
4 oz cream cheese, room temperature
1/4 cup unsalted butter, softened
1 cup powdered sugar
1 tsp vanilla extract

Instructions

Combine warm milk, granulated sugar, and egg in a bowl. Sprinkle yeast over the surface and let rest 5-10 minutes
Add cold butter and flour to the mixture. Knead 8-10 minutes until smooth and elastic
Place dough in a greased bowl. Cover and let rise 10-15 minutes at room temperature
Punch down the dough. Roll it into an 18×12-inch rectangle
Melt 1/2 cup softened butter and spread over the rectangle. Mix brown sugar and ground cinnamon for the filling and sprinkle evenly
Roll up the dough into a tight log. Cut into 12 equal rolls. Transfer to a parchment-lined baking sheet, cover, and refrigerate overnight (8-10 hours)
Remove dough from fridge the next day. Shape rolls if needed and let sit 1-2 hours to complete proofing
Preheat oven to 350°F (175°C). Bake rolls 25-30 minutes until golden
Prepare frosting: beat cream cheese, 1/4 cup softened butter, powdered sugar, and vanilla extract until smooth. Spread on warm rolls before serving
