Ingredients
12 oz (340g) cooked pasta (penne or fusilli recommended)
1.5 lbs (680g) cooked chicken breast, diced
3 medium apples (Granny Smith or Honeycrisp), thinly sliced
1 cup chopped celery
1/2 cup diced red onion
1/3 cup olive oil
1/4 cup honey
2 tbsp Dijon mustard
1 tsp salt
1/2 tsp black pepper
1/4 cup chopped walnuts or pecans (optional)
Instructions
Cook pasta according to package instructions, drain, and set aside.
Dice chicken and set aside.
In a large bowl, whisk together olive oil, honey, Dijon mustard, salt, and pepper to create the dressing.
Add cooked pasta, chicken, apples, celery, and red onion to the bowl with dressing.
Toss until evenly coated.
Chill for at least 30 minutes before serving to allow flavors to develop.
Garnish with chopped nuts if desired.
Notes
For best results, prepare the salad up to 4 hours in advance.
To prevent apple browning, toss slices with a squeeze of lemon juice before adding to the salad.
Swap chicken with tofu or chickpeas for a vegetarian version.
