Ingredients
8 oz penne pasta
1 cup strawberries, chopped
1/2 cup blueberries
1 small cucumber, diced
1/4 red onion, finely chopped
1/4 cup poppyseeds
1/4 cup olive oil
2 tbsp honey
2 limes, zested and juiced
1 tbsp fresh mint leaves, chopped
Salt and pepper to taste
Instructions
Cook pasta according to package instructions; drain and chill.
In a large bowl, combine cooled pasta with strawberries, blueberries, cucumber, red onion, and poppyseeds.
Whisk together olive oil, honey, lime juice, lime zest, and mint.
Pour dressing over salad and toss gently.
Season with salt and pepper.
Refrigerate for 10 minutes before serving.
Notes
Use leftover fruit preserves in the dressing if honey isn’t preferred
Add feta cheese (optional) for extra creaminess
