Ingredients
1.5 lbs boneless skinless chicken thighs
3 tbsp honey
2 tbsp Dijon mustard
1 tbsp whole-grain mustard
2 tbsp olive oil
2 cloves garlic, minced
1 tsp paprika
1 tsp kosher salt
1/2 tsp black pepper
2 cups broccoli florets
1.5 cups baby carrots
1 red bell pepper, sliced
Instructions
Preheat oven to 400°F (200°C)
Lay 4 large foil sheets on a baking sheet
In a small bowl, mix honey, Dijon, whole-grain mustard, oil, garlic, paprika, salt, and pepper
Place 3-4 chicken thighs on each foil sheet
Brush glaze over chicken and vegetables
Layer broccoli, carrots, and bell pepper around chicken
Fold foil packets tightly, sealing edges
Bake 25 minutes until chicken reaches 165°F and vegetables are tender
Notes
Can prep packets up to 1 day ahead, refrigerated
For meal prep, freeze unopened packets up to 3 months
Serve with remaining glaze drizzled over packets before opening
