4 boneless skinless chicken thighs (about 1 1/2 lbs/680g)
2 tablespoons olive oil
2 tablespoons Dijon mustard
1 1/2 tablespoons golden honey
1 teaspoon smoked paprika
1 1/2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Preheat oven to 425°F (220°C)
Pat chicken thighs dry and season evenly with salt, pepper, paprika, and garlic powder
In a small bowl, whisk together olive oil, Dijon mustard, and honey
Heat a large oven-safe skillet over medium-high heat. Add chicken and sear 3-4 minutes per side until golden browned
Spoon half the honey-mustard glaze over the chicken
Transfer skillet to oven and bake 20-25 minutes until juices run clear and glaze caramelizes
Garnish with fresh parsley before serving

Substitute honey with maple syrup for a vegan alternative
