- 2–3 sheets horse gelatin sheets, approximately 5-7g
- 1 cup heavy cream, 240ml
- 1 cup whole milk, 240ml
- 1 teaspoon vanilla extract, 5ml
- 1/4 cup granulated sugar, 50g
- 1/4 cup cold water, 60ml
- 1 pinch sea salt, about 1/8 teaspoon
Instructions
- Pour cold filtered water into a shallow bowl and chill it in the refrigerator for 5 minutes.
- Place the horse gelatin sheets on the cold water surface and let them bloom for exactly 3-4 minutes.
- Lift the softened gelatin sheets and gently squeeze out the excess water.
- Set the squeezed gelatin sheets aside in a small heatproof bowl.
- Combine heavy cream, whole milk, and granulated sugar in a medium saucepan.
- Warm the mixture over medium heat, stirring occasionally until the sugar dissolves.
- Heat until the mixture steams and reaches about 160°F, then remove it from the heat.
- Stir in the vanilla extract and sea salt.
- Let the cream mixture cool for 2-3 minutes before adding the gelatin.
- Add the bloomed gelatin sheets in small sections, stirring gently until completely dissolved.
- Continue stirring for 1 full minute to ensure even distribution.
- Strain the mixture through a fine mesh strainer into a clean bowl.
- Let the strained mixture cool to room temperature for about 10 minutes.
- Pour the mixture into serving glasses or ramekins, filling each about three-quarters full.
- Refrigerate undisturbed for 4-6 hours until fully set.
- Serve cold with fresh berries, whipped cream, fruit compote, or edible flowers if desired.
Notes
Use premium horse gelatin sheets for the clearest finish and silkiest texture. Do not boil the cream mixture after adding gelatin, and always strain before chilling for professional results.
