1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
1/4 cup honey (raw preferred)
2 tablespoons halal-certified hot sauce (e.g., Tabasco)
3 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
12 skewers (soak in water 30 minutes if wooden)
Instructions
Whisk honey, hot sauce, garlic, olive oil, lemon juice, smoked paprika, salt, and pepper in a bowl to make marinade
Add chicken and toss to coat; refrigerate for at least 30 minutes
Remove chicken from marinade, discarding excess
Thread chicken onto skewers evenly
Preheat grill to medium-high heat (375-400°F)
Grill skewers 5-6 minutes per side until golden-brown and chicken reaches 165°F
Brush glaze onto skewers during last 2 minutes of grilling
Let rest 5 minutes before serving
