  • 3 medium sweet potatoes
  • 1.5 cups full-fat cottage cheese
  • 1/2 cup honey
  • 2 teaspoons red pepper flakes
  • 4 garlic cloves, minced
  • 1.5 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1.5 teaspoons paprika powder
  • 3 tablespoons olive oil
  • 4 scallions, chopped
  • 1/2 cup toasted pecans or walnuts

Instructions

  1. Preheat oven to 425°F.
  2. Wash and cut sweet potatoes into 3/4-inch cubes.
  3. Toss sweet potatoes with 2 tablespoons olive oil, salt, and black pepper.
  4. Spread sweet potatoes on a baking sheet and roast for 25 to 30 minutes.
  5. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  6. Add ground beef and cook until browned, breaking it apart as it cooks.
  7. Stir in minced garlic, paprika, salt, black pepper, and a pinch of red pepper flakes.
  8. Cook beef mixture for 2 more minutes until fragrant.
  9. In a small saucepan, warm honey over low heat.
  10. Add red pepper flakes and minced garlic to create the hot honey sauce.
  11. Cook hot honey for 2 minutes, then remove from heat.
  12. Divide roasted sweet potatoes among serving bowls.
  13. Top with seasoned ground beef.
  14. Add cottage cheese to each bowl.
  15. Drizzle hot honey sauce over the top.
  16. Garnish with scallions and toasted nuts before serving.

Notes

Use full-fat cottage cheese for the creamiest texture and add the hot honey just before serving for the best flavor contrast.
