- 1.5 pounds ground beef (90/10 lean)
- 3 medium sweet potatoes
- 1.5 cups full-fat cottage cheese
- 1/2 cup honey
- 2 teaspoons red pepper flakes
- 4 garlic cloves, minced

- 1 teaspoon black pepper
- 1.5 teaspoons paprika powder
- 3 tablespoons olive oil
- 4 scallions, chopped
- 1/2 cup toasted pecans or walnuts
Instructions
- Preheat oven to 425°F.
- Wash and cut sweet potatoes into 3/4-inch cubes.
- Toss sweet potatoes with 2 tablespoons olive oil, salt, and black pepper.
- Spread sweet potatoes on a baking sheet and roast for 25 to 30 minutes.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in minced garlic, paprika, salt, black pepper, and a pinch of red pepper flakes.
- Cook beef mixture for 2 more minutes until fragrant.
- In a small saucepan, warm honey over low heat.
- Add red pepper flakes and minced garlic to create the hot honey sauce.
- Cook hot honey for 2 minutes, then remove from heat.
- Divide roasted sweet potatoes among serving bowls.
- Top with seasoned ground beef.
- Add cottage cheese to each bowl.
- Drizzle hot honey sauce over the top.
- Garnish with scallions and toasted nuts before serving.
Notes
Use full-fat cottage cheese for the creamiest texture and add the hot honey just before serving for the best flavor contrast.
