Ingredients
4 boneless skinless chicken breasts (6 oz each)
8 oz softened cream cheese
2–3 medium jalapenos, seeded and diced
1 cup shredded cheddar cheese
1/2 cup breadcrumbs
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
Instructions
Preheat oven to 375°F (190°C)
Place chicken breasts between plastic wrap and flatten to 1/2-inch thickness
In a bowl, mix cream cheese, diced jalapenos, 1/2 tsp salt, and garlic/onion/paprika
Spread the jalapeno-creamer cheese mixture evenly on each flattened breast
Sprinkle 2 tbsp cheddar cheese and a pinch of breadcrumbs over each
Transfer to a baking dish (parchment-lined) and top with remaining breadcrumbs and 2 tbsp cheddar
Bake 25-30 minutes until golden and juices run clear
Notes
For uniform cooking, flatten chicken breasts to even thickness
Chill leftover filling in a sealed container up to 24 hours
Optional toppings: cooked bacon (substitute with smoked paprika) or green onions
Cheese variations: try pepper jack for added heat or shredded colby jack for stretchiness
