- 2 packets unflavored gelatin powder
- 2 cups 100% fruit juice, preferably low-sugar cranberry, pomegranate, or mixed berry juice
- 1/2 cup cold water
- 1 cup fresh berries, such as raspberries, strawberries, blueberries, or blackberries
- 1–2 tablespoons honey or stevia, optional
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract, optional
Instructions
- Pour cold water into a small bowl.
- Sprinkle gelatin evenly over the surface.
- Let the gelatin sit undisturbed for 5 minutes to bloom.
- Heat fruit juice in a saucepan over medium heat until just below boiling.
- Pour the hot juice into the bloomed gelatin mixture.
- Whisk gently until the gelatin dissolves completely.
- Add lemon juice, vanilla extract, and optional sweetener.
- Let the mixture cool to room temperature for about 30 minutes.
- Pour half of the mixture into serving bowls or a large glass dish.
- Refrigerate for 1 hour until partially set.
- Distribute fresh berries evenly over the partially set jello.
- Pour the remaining mixture over the berries.
- Refrigerate for at least 3 more hours until completely firm.
- Serve chilled.
Notes
Bloom the gelatin in cold water before adding hot liquid for the smoothest texture. Do not boil the juice, and let the mixture cool before adding fruit so the berries stay fresh and firm.
